Teriyaki Salmon

Teriyaki Salmon Bowl is defiantly a treat in any kitchen. White Owl Steakhouse not only offered Alberta premium cuts of steaks, we also offered prime seafood such as fresh Pacific Salmon , such as : Chinook, Coho, Sockeye, fresh from the shores of the Pacific Northwest off of Vancouver Island. Salmon was served four distinct ways : Salmon Wellington, Grilled and Poached Salmon and our Signature dish : Hawaiian Glazed Salmon Bowl.

The serving cost was $58 per customer, but you can make this same dish at home for only $10 per plate per person.

Terrible Salmon Bowl

Ingredients:

For the Salmon:

• Salmon fillets

For the Marinade:

• 1/4 cup pineapple juice

• 1/4 cup honey

• 1/4 cup soy sauce

• 1 teaspoon minced garlic

• 1/2 teaspoon fresh minced ginger

• A pinch of red pepper flakes

Teriyaki Sauce:

• 1 cup vegetable stock

• 1/2 cup pineapple juice

• 1/4 cup brown sugar

• 1/8 cup vinegar

• 1/8 cup soy sauce

• 1 teaspoon minced ginger

• 1 teaspoon minced garlic

• A pinch of red pepper flakes

• 2 tablespoons cornstarch mixed with water or stock (cornstarch slurry)

Teriyaki Salmon

Instructions:

1. Prepare the Marinade: Combine all marinade ingredients in a shallow dish. Add the salmon fillets, ensuring they are fully coated. Marinate for at least 2 hours, or preferably overnight.

2. Grill the Salmon:

◦ Preheat a cast-iron skillet or grill to medium-high heat.

◦ Add 3 tablespoons of butter and 1/4 cup of grapeseed oil to the skillet.

◦ Grill the salmon fillets for 5 minutes per side, or until cooked to your desired level of doneness.

◦ Transfer the grilled salmon to a baking sheet and bake in a preheated 400°F (200°C) oven for 5 minutes.

3. Make Teriyaki Sauce:

◦ In a saucepan, combine all sauce ingredients except the cornstarch slurry. Bring to a gentle boil.

◦ Whisk in the cornstarch slurry to thicken the sauce.

◦ Reduce heat and simmer until the desired consistency is reached.

4. Assemble the Bowls:

◦ Serve the grilled salmon over a bed of sticky rice.

◦ Drizzle the teriyaki sauce over the salmon.

◦ Garnish with toasted sesame seeds.
