Lost in the Woods? One-Pot Stormtrooper Curry Chicken

They’re on the lookout for a very different kind of “force”—the local wildlife! We’re talking about none other than “The Boss,” a grizzly bear so legendary he’s survived being hit by a train not just once, but multiple times. He’s a true king of the mountains, and even these troopers know to be on the lookout.

But even a stormtrooper needs to eat, right? That’s where I come in! After watching my video, you’ll be ready for your own wilderness adventure with my One-Pot Campfire Chicken recipe. It’s packed with flavor and so easy to make, you’ll feel like a real survivor, no matter what surprises the woods throw your way.

One-Pot Campfire Curry Chicken
There’s nothing better than a hot, hearty meal after a day of being out in the wild. Forget the fuss and the dirty dishes—this one-pot campfire curry chicken is all about simple, delicious comfort. It’s got everything you need: tender chicken, a rich and aromatic curry sauce, and a little bit of warmth to fill your soul.
This is a dish you can cook over an open flame, letting the smoky air and the crackle of the fire add their own unique flavor. You don’t need fancy tools, just a solid pot and a good appetite.

One-Pot Campfire Curry Chicken
Ingredients:
* 2 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
* 2 tbsp olive oil
* 1 large yellow onion, chopped
* 3 cloves garlic, minced
* 2 tbsp curry powder
* 1 (14-oz) can coconut milk
* 1 cup chicken broth
* 1 large carrot, sliced
* 1 red bell pepper, chopped
* 1 cup cubed potatoes
* Salt and black pepper to taste
2 Bay leaves
Method:
* Place a large cast-iron pot or Dutch oven over a bed of hot coals or on a campfire grate.
* Add the olive oil and then the chopped onion. Cook for 3-5 minutes, until the onions start to soften.
Chef Bari’s Tip: Adding the onions first is key! Their natural moisture will create a protective layer on the bottom of the pot, preventing the chicken from sticking and making cleanup a breeze.
* Add the cubed chicken to the pot. Stir occasionally until the chicken is browned on all sides.
* Stir in the minced garlic and curry powder. Cook for about 1 minute until fragrant.
* Pour in the coconut milk and chicken broth, scraping the bottom of the pot to loosen any browned bits.
* Add the carrots, potatoes, and red bell pepper. Stir everything to combine.
* Bring the mixture to a simmer, then reduce the heat by moving the pot to a cooler part of the coals. Cover and cook for 20-30 minutes, or until the potatoes and carrots are tender and the chicken is cooked through.
* Season with salt and pepper to taste. Serve hot, right out of the pot.

Simple Campfire Grill Naan
This recipe is designed to be cooked in a skillet, which makes it easy to do in any campfire setting . The result is soft, puffy bread that’s perfect for scooping up every last bit of sauce.
Ingredients:
* 1 ½ cups warm water
* 2 tsp active dry yeast
* 1 tsp sugar
* 3 ½ to 4 cups all-purpose flour
* 2 tsp salt
* 2 tbsp plain yogurt
* 2 tbsp olive oil
* Melted butter or garlic butter for brushing (optional)
Method:
* In a large bowl, combine the warm water, yeast, and sugar. Let it sit for 5-10 minutes until the mixture gets foamy. This means the yeast is active.
* Add 3 ½ cups of the flour, salt, yogurt, and olive oil to the yeast mixture. Stir until a shaggy dough forms.
* Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, adding more flour as needed, until the dough is smooth and elastic. It should be slightly tacky but not sticky.
* Place the dough in a lightly oiled bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
* Once risen, gently punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball.
* Heat a heavy-bottomed skillet or cast-iron pan over medium-high heat.
* Roll one dough ball into an oval or round shape about ⅛-inch thick.
* Place the flattened dough on the hot, dry skillet. Cook for 1-2 minutes until bubbles form on the surface.
* Flip the naan and cook the other side for another 1-2 minutes, until lightly browned and puffy.
* Remove from the skillet and brush with melted butter or garlic butter while still warm.
Repeat with the remaining dough balls. Serve immediately.
