Yesterday I made this epic homemade beast of a sandwich—tender roast beef piled high with caramelized onions, vibrant bell peppers, and gooey, melty cheddar dripping over every bite, all hugged by a crusty, flour-dusted baguette. It got a lot of attention on my Twitter account @bari_chef (the likes and comments were rolling in!), and I thought I’d share the full recipe with you right here. Giving off serious Philly cheesesteak vibes, but with that extra juicy roast beef twist—pure comfort food heaven 😍

Homemade Beast: Roast Beef Philly-Style Cheesesteak Sandwich
Excerpt: Tender roast beef, caramelized onions, colorful bell peppers, and rivers of gooey melted cheddar cheese come together on a crusty baguette for the ultimate comfort sandwich. This loaded homemade version channels serious Philly cheesesteak energy—messy, flavorful, and impossible to put down. Perfect for cozy nights or whenever you need serious satisfaction.
Ingredients (Serves 4 big sandwiches)
For the Beef:
- 1.5–2 lbs thinly sliced roast beef (deli-style or home-roasted and sliced paper-thin; chuck or rump roast if cooking your own)
- TIP : Don’t want all the work cooking the beef ? No problem. Head over to Costco and buy the already cooked and sliced beef in 3 separate packages ready for the microwave. There are 3 pouches ( each pouch good for 3 guests) Cost : $19.99 CA for 3 packed pouches. That’s only $3 per person . Exceptional savings for today’s high cost food items.
- 1 tbsp oil or butter (for warming)
- Salt and black pepper, to taste
- Optional: 1–2 tsp Worcestershire sauce for extra umami
For the Veggies:
- 2 large onions, thinly sliced
- 2–3 bell peppers (orange, red, or a mix for vibrant color), sliced into strips
- 2 tbsp butter or neutral oil
- Salt and black pepper, to taste
- Optional: ½ tsp garlic powder or minced garlic
For Assembly:
- 4 crusty baguette-style rolls or hoagie buns (flour-dusted for that authentic look)
- 8–12 slices sharp cheddar cheese (or more for maximum gooeyness!)
- Butter or garlic butter, for toasting the rolls

Instructions
- Prep the Veggies:
Heat butter or oil in a large skillet over medium heat. Add the sliced onions and cook slowly for 10–15 minutes, stirring occasionally, until deeply caramelized and golden-brown.
Toss in the bell pepper strips, season with salt, pepper, and garlic powder if using. Cook another 5–8 minutes until softened but still with a bit of bite. Remove from heat and set aside. - Warm the Beef:
In the same skillet (or a separate one), heat a little oil or butter over medium. Add the thinly sliced roast beef in batches if needed.
Season with salt, pepper, and a splash of Worcestershire. Warm through for 2–4 minutes—just until heated and juicy, not overcooked. - Toast the Rolls:
Preheat your broiler or use a skillet. Slice the baguettes lengthwise and spread the insides lightly with butter (or garlic butter for bonus flavor).
Toast under the broiler for 1–2 minutes until golden and crusty. - Assemble the Beast:
Pile the warm roast beef generously on the bottom half of each toasted roll.
Load on the caramelized onions and vibrant bell peppers.
Top with overlapping slices of cheddar cheese—don’t skimp!
Pop back under the broiler for 1–2 minutes until the cheese is fully melted, bubbly, and starting to drip over the edges. - Serve:
Close the sandwich (it’ll be overflowing—embrace the mess!). Slice in half if sharing… or don’t. Dig in immediately while the cheese is gooey and everything’s hot.
Tips for Peak Beast Mode:
- Use provolone for classic Philly style, but sharp cheddar gives that bold, melty edge.
- If your roast beef has juices, reserve some for dipping the ends.
- Add a kick with hot peppers or steak seasoning on the beef.
