Vegas Unwind: Why I’m Heading Back to the Iconic Bellagio

Good Morning Folks!

Today I’m going to talk about something a little different besides cooking. Let’s talk Las Vegas! As chefs, we pour everything into the kitchen — the heat, the pressure, the long hours — so when it’s time to unwind, many of us head straight to Sin City. There’s something about the energy, the lights, and yes, the incredible food scene that recharges the soul.

If Gordon Ramsay has multiple restaurants here — including Hell’s Kitchen at Caesars Palace, Gordon Ramsay Steak at Paris Las Vegas, and others — it tells you everything you need to know. Vegas has become the ultimate playground for chefs to showcase their skills on a grand stage.

The trend really exploded in the late 1990s and 2000s. Visionaries like Steve Wynn raised the bar with upscale resorts, and celebrity chefs followed, turning the Strip into a world-class dining destination. What started with pioneers like Wolfgang Puck has grown into a full culinary renaissance that draws food lovers from everywhere.

As someone who’s not a big celebrity chef but has been in the hospitality business for the past 40 years, it only makes sense that I indulge in the same escape. Vegas is where I release the stress, recharge my creativity, and enjoy the finer things that make life sweet.

Bellagio Botanical Conservatory

Soon, my next stay in Vegas will be at the Bellagio Las Vegas due to its timeless elegance, stunning fountains, world-class service, and that perfect blend of Italian-inspired luxury and modern comfort. The iconic Fountains of Bellagio, the Conservatory & Botanical Gardens, the fine art gallery — it all adds up to an experience that feels truly special.

While I’m there, I’ll be bringing you a full room review, restaurant reviews, and my thoughts on the overall service. This isn’t my first time at the Bellagio, and with the cost of everything these days, it only makes sense to treat yourself to the best of the best.

Yes, it costs more than places like Circa Las Vegas or Resorts World — most definitely! But when you compare it to something like the Fairmont Banff in the Canadian Rockies, the Bellagio often delivers incredible value with more competitive room rates than that majestic castle in the mountains. Luxury doesn’t have to break the bank when you choose wisely.

The History of the Bellagio

The Bellagio opened on October 15, 1998, after a $1.6 billion construction that made it the most expensive resort in the world at the time. Built on the former site of the legendary Dunes Hotel & Casino, it was the brainchild of Steve Wynn. Inspired by the picturesque village of Bellagio on Italy’s Lake Como, the resort brought European elegance to the desert with its dancing fountains, Chihuly glass sculpture in the lobby, and commitment to fine art and hospitality.

Over the years, it has continued to evolve while keeping that signature magic alive — from the breathtaking “O” by Cirque du Soleil to seasonal displays in the Conservatory. It truly helped redefine what a Las Vegas resort could be.

I’m looking forward to this next stay with excitement and gratitude. Vegas always reminds me why we work so hard — so we can play and create memories that last a lifetime.
