When that meat hits the screaming-hot cast iron, the Maillard reaction creates a crust that store-bought patties just can’t touch. And the onions? They soften into a sweet, translucent mess right in the beef fat.

The Ultimate Smashed Fried Onion Burger

Ingredients:

  • Ground beef (80/20 fat ratio is non-negotiable)
  • Yellow onion, thinly sliced
  • American cheese slices
  • Brioche buns
  • Salt and black pepper
  • Butter (for the buns)

Instructions:

  1. Get your cast iron skillet ripping hot over medium-high heat.
  2. Form the beef into loose 3-ounce balls. Don’t overwork the meat.
  3. Toss a handful of onions into the skillet, then place the beef balls directly on top of them.
  4. Take a heavy spatula and smash the beef down hard into the onions until the patty is thin. Season generously with salt and pepper.
  5. Cook until the edges are crispy and dark—that’s the good stuff. Flip the burger, add the cheese, and cover the pan for 30 seconds to get the cheese melting into the onions.
  6. Toast your buttered buns, stack it up, and serve immediately.
