How To : Let’s make Teriyaki Chicken

You know the fast easy dishes you usually buy, while in a hurry after a busy work day at Tokyo Express ?

Well, the classic boneless skinless Teriyaki Chicken Rice or Noodle Bowl is easy and fast to make at home.

I made a step by step video showing you how easy it is to make Chicken Teriyaki Stir Fry for a family of six. Easy Peezy! And – it’s good for you, heathy, heathy, heathy.

So, the first step is to make your Teriyaki sauce.

Teriyaki Sauce

Ingredients:

1/2 cup soy sauce

3 cups of water or Chicken stock

1/2 cup of brown sugar

4 tablespoons of Vinegar

1/4 cup of orange juice

3 tablespoons of white sugar

3 cloves of fresh minced garlic (substitute with 2 teaspoons of powder granulated garlic if you don’t have fresh garlic. But, it’s the fresh taste of ingredients that make this sauce)

1 teaspoon of fresh fine chopped Ginger ( don’t forget to remove the outer husk or peel )

1/2 teaspoon of chilli flakes ( optional)

2 – 3 tablespoons of cornstarch ( to thicken)

Method :

Combine all ingredients except cornstarch into saucepan. Bring to a boil, turn down to a simmer.

Take cornstarch and place in a small bowl. Now add 4 tablespoons of cold water. Mix well with spoon until dissolved.

Add cornstarch mixture, mixing with wire whip (whisk) If you don’t have a whisk, you can use a wooden spoon.

Bring back to a simmer, stirring and watching. If you leave it alone, it will make a big mess on your stove. Once it’s nicely simmering and won’t boil over, then let it cook for 15 minutes.

Cut Your Veggies

Cut your fresh veggies for your stir fry ; use veggies you have in the fridge. Make it simmer and easy for you.

Veggies to Use – select only 4 :

  • Red Peppers
  • Green Peppers
  • Green Onions
  • Celery
  • Bok choy
  • Broccoli
  • Snow peas
  • Sliced Carrots
  • Mushrooms

Optional:

Sliced Water Chestnuts

Cashews

Preparing Your Chicken

I use frozen Chicken breast from Costco, already portioned to the correct size. Defrost and cut into cubes ; add fresh minced garlic , fresh or powder ginger , canola or Grapeseed oil and black pepper.

Want to spice it up with? Add a teaspoon of fry chilli peppers.

Prepare your Rice and Noodles

Cook Sticky / Pearl Rice as per instructions. 2 cup of rice – 3 1/2 cups of water or chicken stock. Using rice cooker saves your day and frees time.
