Banana Loaf

Lets Go !

Begin by setting your oven at 350 degrees

Baking Banana Bread : 55 – 60 mins

Baking Muffins: 30 minutes

Dry Ingredients:

2 1/4 cups sifted Flour

1/2 teaspoon of salt

1 1/2 teaspoon baking soda

1 1/2 teaspoons of baking powder

1 teaspoon of cinnamon

1/2 teaspoon of nutmeg

Wet Ingredients:

• 3 large eggs

• 1 cup of mashed ripe bananas 

• 1 cup of sugar ( dry cup )

• 1/4 cup of butter (16 tablespoons)

• 1/4 cup of Canola Oil

• 3/4 cup milk

• 1 teaspoon of Vanilla

Optional: Add 1/4 cup of raisins or chocolate chips . Chopped walnuts are great too !

Important : Spray your muffins tins or Bread Pan well before adding batter.

Banana Muffins

Method

1. Get a medium size bowl and sift the 2 1/4 cups of flour into the bowl

2. Sift in 1 1/2 teaspoons each : of baking soda and baking powder

3. Place in the salt. 

4. Mix all dry ingredients. 

5. In your favourite mixer, add soft butter and whip. Add sugar and mix. Add three large eggs. Whisk on medium speed until it’s a nice and smooth consistency. 

6. Add your mashed ripe bananas and whisk well. 

7. Add 1/2 cup of milk , vanilla and 1/4 cup of Canola Oil.  Whisk until a smooth ribbon consistency.

8. Add Flour mixture in three different stages, but at the same time, don’t over mix it.

9. Optional: Add raisins or cheese chips (1/4 cup)
TIP : Let batter sit for 5 minutes giving gives the gluten time to relax.

10. Banana Loaf : Place in 350 degrees F (preheat oven) for 55 – 60 minutes depending on your oven. With my oven it’s ready in 55 minutes.

11. Muffins: Place in 350 degrees F (preheat oven) 30 minutes.

12. Do the toothpick test. If the toothpick comes clean it’s done.

13. Take out of the oven and let it cool off for 5 minutes until you remove it from the bread pan. Remove banana bread onto flat surface, preferably a wooden board; however, your counter with parchment paper on it, will do the trick. If you want to add frosting, let completely cool off for 45 minutes before adding frosting.

Storage of Extra Muffins and Banana Loaf

If, and a big IF , if you have a few muffins leftover, you can freeze them or place them in an air tight container at room temperature. Do NOT put in fridge, as they will quickly become hard and stale.

White Frosting for Muffins

Ingredients:

• 1/2 cup butter, softened

• 4-1/2 cups confectioners’ sugar

• 1-1/2 teaspoons vanilla extract

• 5 to 6 tablespoons milk

Optional: Add food colouring of your choice

Method :

In a large bowl, beat butter and butternut squash purée until creamy. Mix evenly. Beat in the confectioners’ sugar, vanilla and enough milk to achieve desired consistency. Place into piping bag and decorate each muffin.
