
Banana Muffins
Ingredients:
Dry Ingredients:
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
Wet Ingredients:
- 3 large eggs
- 1 cup mashed ripe bananas
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 1/4 cup raisins (optional)
Instructions:
- Combine Dry Ingredients: In a medium bowl, whisk together the flour, salt, baking soda, baking powder, cinnamon, and nutmeg.
- Cream Wet Ingredients: In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the mashed bananas, milk, and vanilla.
- Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. Stir in the raisins, if using.
- Bake: Fill greased muffin tins two-thirds full with batter. Bake in a preheated 350°F (177°C) oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Frost: Let the muffins cool in the tins for a few minutes before transferring them to a wire rack to cool completely. Once cooled, frost with your favorite frosting, such as the Pink Lady Frosting recipe below.

Pink Lady Frosting:
- 1 cup unsalted butter, softened
- 3 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
- 5-6 tablespoons milk
- Red food colouring
- Cream together the butter and powdered sugar until light and fluffy.
- Beat in the vanilla extract.
- If needed : Gradually add milk, one tablespoon at a time, until desired consistency is reached.
- Add a couple drops of red food coloring and mix until combined.
- Frost cooled muffins.
