The Recipe That Saves the Day:
Ready to activate your Dessert Emergency Hotline? Here is the simple, reliable recipe for the “Easy Peezy Chocolate Cake” that you can count on every time.
Prep time: Approx. 15-20 mins
Bake time: 35-46 mins
Total Time: Approx. 1 hour 15 mins
Dry Ingredients:
• 1 ¾ cups Flour
• ¾ cup Cocoa Powder
• 1 ½ teaspoons Baking powder
• 1 ½ teaspoons Baking soda
• 1 teaspoon Salt
• 2 cups Sugar
Wet Ingredients:
• 1 cup Milk
• ½ cup Canola or Grapeseed oil
• 2 large Eggs or 3 small eggs
• 2 teaspoons Vanilla
• 1 cup Hot water (microwave )
Instructions:
1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour( or spray ) your preferred pan (Bundt cake mold or 2 x 8-inch cake pans work great!).
2. Sift all the Dry Ingredients into a large bowl.
3. In a separate large measuring cup, combine all the Wet Ingredients except the hot water.
4. Place the Dry Ingredients into your favourite mixer. Turn it on to a low setting.
5. Gradually add the Wet Ingredients (except hot water) to the dry ingredients while mixing on a low setting. Mix for about 2 minutes until just combined.
6. Now ! Here’s the magic 👇
7. Carefully add the hot water to the mixture while the mixer is on low. The batter will become quite runny – this is expected and perfect! Mix until just incorporated.
8. Pour the runny mixture into your prepared cake pan.
9. Bake for 35 to 45 minutes. Use the toothpick test – insert a toothpick into the centre; if it comes out clean, the cake is ready. If not bake for another 4-5 minutes.
10. Let the cake cool in the pan for about 10-15 minutes before inverting it onto a wire rack to cool completely. Ensure it’s fully cooled before adding icing or ganache.

Toppings
This cake is amazing on its own, but here are a couple of options to take it to the next level:
(Simple Chocolate Icing):
Ingredients:
• 1 stick (½ cup) Butter, melted
• ⅔ cup Cocoa powder
• 3 cups sifted Icing sugar (powdered sugar)
• ⅓ cup Milk
• 1 teaspoon Vanilla
Instructions:
1. Melt the butter in the microwave or on the stovetop.
2. Stir the cocoa powder into the melted butter.
3. Gradually whisk in the sifted icing sugar, alternating with the milk, until smooth.
4. Stir in the vanilla. Mix until evenly combined and smooth.
5. Pour or spread over the cooled cake.
As a chef, Chocolate Ganache isn’t just an ingredient; it’s my secret weapon, my go-to Super Magic! Its intensely rich, pure chocolate flavour is simply unmatched, thanks to that high chocolate-to-cream ratio. This gives me that incredibly smooth, often glossy texture – a far more luxurious and versatile finish than any plain butter icing could dream of!
(Chocolate Ganache)
Ingredients:
• 12 oz ( 176 ml) Semi-sweet chocolate chips
• 3/4 cup Heavy cream (33-35%)
• 1 tablespoon Butter
• 1 tablespoon Rum or strong coffee (optional)
• 1 teaspoon Vanilla
• ¼ teaspoon Salt
Instructions:
1. Place the chocolate chips in a large bowl.
2. Warm the heavy cream and butter in the microwave until the butter is completely melted and the cream is hot (approx. 2 minutes in a typical microwave).
3. Stir the rum or coffee, salt, and vanilla into the hot cream mixture.
4. Pour the hot cream mixture over the chocolate chips and let it sit undisturbed for 5 minutes to allow the chocolate to melt.
5. Whisk briskly until the ganache is nice and smooth and shiny.
6. Pour immediately over the top of the cooled cake, starting from the center. Work quickly as it will begin to set. (Using a piping bag is an option but be prepared for it to set fast – you have about a 5-minute buffer).
Go ahead and be sloppy here ! It’s not a culinary art show , it’s dripping chocolate delicious your kids or grandkids will love ❤️
