Pink Lady Banana Muffins

Banana Muffins

Ingredients:

Dry Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Wet Ingredients:

  • 3 large eggs
  • 1 cup mashed ripe bananas
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup raisins (optional)

Instructions:

  1. Combine Dry Ingredients: In a medium bowl, whisk together the flour, salt, baking soda, baking powder, cinnamon, and nutmeg.
  2. Cream Wet Ingredients: In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the mashed bananas, milk, and vanilla.
  3. Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. Stir in the raisins, if using.
  4. Bake: Fill greased muffin tins two-thirds full with batter. Bake in a preheated 350°F (177°C) oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool and Frost: Let the muffins cool in the tins for a few minutes before transferring them to a wire rack to cool completely. Once cooled, frost with your favorite frosting, such as the Pink Lady Frosting recipe below.

Pink Lady Frosting:

  • 1 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 5-6 tablespoons milk
  • Red food colouring
  1. Cream together the butter and powdered sugar until light and fluffy.
  2. Beat in the vanilla extract.
  3. If needed : Gradually add milk, one tablespoon at a time, until desired consistency is reached.
  4. Add a couple drops of red food coloring and mix until combined.
  5. Frost cooled muffins.
