Beef Wellington

I have many favourites; however, Beef Wellington is one of my favourite recipes to make from scratch. There are so many steps I usually make it for New Years Eve or Christmas Dinner.

As a Chef I am fond of many recipes, but the one dear to my heart is the homemade bread recipe by my wife’s granny. Patricia’s Granny was a hard working Romanian woman who raised her children by herself. Her family were originally settlers from the old country who heard of a better life in Canada, back in the 1870’s. Their family began farming in Alberta when land was given away for one dollar, encouraging settlers to work the land.

Her name was Doris ; as young girl she attended to the cows and home baking with her mom. Traditionally they made perogies, cabbage rolls and homemade bread & buns. Eventually she moved to the Okanagan Valley, settling in Vernon, BC . Hardworking became she would have two several jobs housekeeping plus looking after her children by herself. When I met Patricia, Doris invited me into the family and, it was here I learned about Ukrainian style cooking plus her fabulous homemade bread recipe. It’s such a golden recipe I placed the recipe in my cookbook “ Canadian Recipes of the Great White North “.
