Chickpea Banana and Chocolate Chip Cookie by Chef Bari –

As you know I’m following WW (weight- watchers program) so I’m always seeing what recipe I can make or make into my own version. I found a chickpea crust for pie by WW and I thought this would indeed make a wonder chickpea cookie. So I improvised my very own version called “Chickpea Banana Cookie “. IF you like you could also add chocolate chips to this recipe too. That would make it a “Chickpea Banana & Chocolate Chip Cookie” by Chef Bari.

In Fact my Chickpea Banana Cookie is also a Protein Bar too – great for your next hiking trip too !

Ingredients:

1 can ( 15 oz/ 540 ml) of Chickpeas

1 Banana purée

3 tablespoons of water

2 tablespoons of cornstarch

2 tablespoons of Stevia ( no calorie sugar ) or 2 tablespoons of regular sugar

1 teaspoon of vanilla

1 teaspoon of cinnamon

Optional: Add Chocolate Chips into each cookie ( 3 chocolate chips per cookie – your choice) once it’s on your baking sheet ( this way you can control the amount of chocolate chips )

Preheat oven to 400 degrees F

Method :

1. Purée all above until smooth in your blender. Must be smooth. No grit. If need be stop blender, mix and even add a touch more water. A nice smooth consistency is important!

2. Use piping bag ( like I do ) or Spoon onto lined baking sheet ( make sure you spray your liner !)

Note : IF you’re using a spoon, flatten them good or the centre’s won’t cook properly. Spray the back of your spoon so it won’t stick to the batter.

3. Bake on baking sheet with liner at 400 degrees F for 30 35 minutes . ( check it after 30 minutes because your oven may be different then mine )

WW = zero points for plain. 1 point if you add chocolate chips or drizzle honey 🍯 on top.

To The Plate :

Option 1 : Drizzle honey and cinnamon on top WW : 1 point

Option 2 : Sprinkle icing sugar on top WW : 1 point

Option 4 : Add Chocolate Chips to Recipe WW : 1 point

Option 4 : Add one tablespoon of Kool Whip on top

Option 5 : Eat as is – great healthy protein cookie for your next hiking trip. WW : Zero points
