Ciao
Believe it or not the greeting “Ciao” originated from the Venetian phrase “s-ciào vostro“, meaning “I am your slave“ , or “ I am at your service “ .
Today it’s the informal greeting meaning “Hi “ and “Goodbye “. It’s also a great way to greet you into my kitchen — Ciao !
That being said , if you come into my home in the morning, I would greet you by saying “ buongiorno “ meaning “ Good Morning!”
Like my ancestors, I would like to say “Benvenuto a casa mia !” as in , “Welcome to my home “ and “La mia cucina” (my kitchen) .
As any Chef I would like to “Welcome you to my Kitchen “ —

Today and everyday my kitchen is busy from baking to cooking and I would love to introduce you to a typical week in my home. In the morning it’s common for me to be up early to begin baking bread, buns or pizza dough. If I’m preparing for a birthday , my morning is busy making cakes.
Even though I’m retired as a professional chef I still cook for my immediate family of five. Usually start prepping ( Mise en place ) in the late afternoon,( between 2 – 3 pm ) getting ready for dinner.
Realistically families don’t have the time to prepare dinner due to the busy lifestyles , from work long hours to attending to our children ; you’re on a treadmill of juggling life 24/7. If you’re lucky you have time during the weekend to try various cooking or baking skills.
Baking is the popular pick these days because of the rewards of sweet and treats after the labouring mornings of preparing ; the whole family eagerly awaits. This is why Chef Anna Olson is everyone’s favourite Pastry Chef.
During my years as a chef I spent a lot of time from fine dining to organizing huge banquets, be it weddings to corporate Christmas parties. The logistics of planning banquets for 3000 guests can become overwhelming at times, but with the right brigade of cooks and chefs de party , we become a disciplined harmonious team. That being said our work isn’t appreciated like the trending bakers of today.
Today I would like to introduce you to my kitchen with a few examples and recipes you may find of interest.
