Working on Bloody Vampire Cake

Good Day Y’all !

In the last couple of weeks I’ve been working on the most outrageous Halloween Vampire Cake. This is year planning the most scary Halloween Vampire Cake, and after much consideration of themes I decided to do a “Black Forest Cherry Halloween Vampire Cake w/ Death Chocolate frosting, decorated with bloody candy shard glass.

On top of everything else I’m making my grandkids some scary Halloween Cupcakes.

Each stage is prepared on separate days, as this cake takes time and patience. The First Stage I’m going to make a “Vampire Coffin” out of sugar cookies. I got this idea after watching Season 2 Episode 4 “ Day After Halloween and Ancient Coffin“ from Halloween Cookie Challenge on FoodTV Network. After seeing the 3D Vampire Coffin made out of sugar cookies, I just had incorporate it into my Halloween Vampire Cake Theme as a side piece.

NOTE : This requires Medium to Expert Baking Skills. If you’re adventurous, go for it, but please don’t complain if you’re not experienced enough to make it. Pay close attention to my videos and watch them several times before attempting.

ITEMS YOU WILL NEED TO ASSEMBLE CAKE NOT IN RECIPES BELOW :

1. Oreo Cookies ( blended into crumbs for the “grave dirt”

2. Cherry Pie Filling ( Can be found in any supermarket- usually comes in a can, already to use )

3. Bloody Candy Red Glass

4. Simple Syrup ( Recipe : 1 cup of sugar to 1 cup of water. Bring to a boil to dissolve sugar and let cool.)

OK — Here we go …. ( Have Fun making the Halloween Cake ; I sure did )

FIRST STAGE

Let’s begin with obvious— making the cakes. Begin baking the Blackforest Cake AND Velvet Cake. Best to use my “Easy Peezy Chocolate Cake Recipe “ for the Blackforest Cake. The only difference here, you will divide the cake batter into 2 cake pans.

You will also make a RED VELVET CAKE – I highly suggest you use Anna Olson’s Recipe 👇 It’s the best !

Easy Pezzy Chocolate Cake — See Recipe HERE. Each recipe will give you two round cakes, however you’ll only need one round cake. What I did was I made cupcakes with the extra batter for my grandchildren. They love those extra treats as I continue preparing my Vampire Cake.

Once both cake are ready, let cool, wrap and freeze over night.

SECOND STAGE — Making the Bloody Sugar Glass

Equipment Required :

Medium sized pot

Candy Thermometer

Baking Sheet with silicon liner

Ingredients:

1 cup of water

1/2 cup of clear corn syrup

1 3/4 cups of sugar

1/2 teaspoon cream of tartar

3 drops of Red Food Colouring

METHOD :

Place all ingredients into medium size pot on burner. Dissolve ingredients under medium high heat to a boil. Place Candy Thermometer into pot and continue cooking until your thermometer reads 300 degrees F ( 149 degrees C ) which is the HARD CRACK STAGE.

Once it’s reach 300 degrees F quickly pour it onto the baking sheet with silicon liner.

Let cool completely. I placed mine in the freezer for 45 minutes and then brought it out and smashed it to make the shard glass effect. Please see my video 👇

THIRD STAGE – Making the Frostings

First Frosting will be Grand Marnier Cream Cheese Frosting ( Will be used inside the cake layers w/ cherry pie filling in the middle and the rest will be used as the thin crumb icing barrier — See Video) .

Ingredients:

6 tablespoons of butter ( room temperature)

2 cups of Icing Sugar ( Powder Sugar )

1 package ( 250 g ) cream cheese ( room temperature)

2 teaspoons of Vanilla

1 teaspoon of Grand Marnier

Method:

Add butter to mixer and beat. Now add icing sugar ( on low speed ) and mix until fluffy and smooth. Add the cream cheese vanilla and sliced strawberries. Again mix until nice and fluffy. If too thin add more icing sugar if needed.

SECOND FROSTING

Begin preparing the Death Chocolate Frosting (Will be used to for the outside of your cake).

Ingredients:

1 cup butter ( room temperature)

4 cups icing sugar ( you may call it “ Powdered Sugar “ )

1/4 cup dark cocoa powder

1/3 cup of milk

1 teaspoon vanilla extract

3 drops of black food colouring

Method:

• Add 1 cup of room temperature butter to electric mixer and combine. Turn down speed and begin adding Icing Sugar until light and fluffy.

• Slowly add dark cocoa powder, vanilla and 3 drops of Black food colouring.

Incorporate until the icing mixture is nice and smooth and pliable. Scrap down the sides too. If too thick add 1/3 cup of milk ( if needed)

• Scrap down sides until fully mixed in. Once again — icing should be light and fluffy.

• Place a portion of icing into piping bag and begins assembling the cake. ( See video)

Place in fridge until needed.

See full video and photos below for assembling. The fun part ! Please watch several times before you begin. Maybe do one procedure, stop video and continue to next procedure and so on. Most importantly — have FUN and if it takes more then one day to make it, do so. You can make the VAMPIRE COFFIN ahead ; as well, you can make the cake ahead and freeze until ready. Take your time and enjoy the procedure.

STAGE FOUR BUILDING THE CAKE INCLUDING DECORATIONS

Remove one chocolate cake and one red velvet cake from freezer and let thaw out. Once room temperature it’s time to slice each cake length wise. You should have 6 thin cakes ready to build. ( See Video)

ITEMS YOU WILL NEED NOW :

1. Have both Frostings ready in separate piping bags.

2. Simple Syrup to lightly moisten cakes. ( If you missed it above, it’s a ratio of 1 cup of sugar to 1 cup of water. Bring to a boil to dissolve sugar and let cool. You can either brush onto each layer of cake or use a spray bottle. )

3. Cherry Pie Filling

4. Crushed Oreo Cookie crumbs

For easy construction of your Halloween Cake, place a chocolate cake onto a “Turntable Cake Stand”, but first adding a touch of frosting to the centre of the turntable and place on your first slice of chocolate cake.

Moist cake with “Simply Syrup” Brush lightly over cake or spray in spray bottle. Careful! Don’t over do it — LIGHT ! Or your cake will be a soggy mess.

Begin piping out cream cheese frosting along the outer circle of the cake. Add Cherry Pie Filling into the middle of the cake. ( See Video)
